On recent visit to a local cash-and-carry I found an Asian food aisle. So, picking up as many ingredients as I could, I´ve tried using some of them in a couple of dishes. This was the first time I had tried soba noodles, and I must say that I really enjoyed them. This is the recipe I concocted for a Marinated Pork and Soba Noodle Stir Fry.
Ingredients:
For the marinade:
- large pinch of ground Chinese 5-spice
- small amount of fresh ginger, grated
- large glug of soy sauce
- juice of half a fresh lemon
- large glug of sesame oil
For the main dish:
- 350 g pork pieces, cut into small pieces
- 1 large spring onion, chopped
- 25 g dried shiitake mushrooms, chopped
- 1/2 red pepper, chopped
- handful of green beans, chopped
Method:
- Add the marinade ingredients to a medium-sized bowl, then add the pork and stir well. Cover and place in the fridge to marinate for at least 2 hours.
- Place the the dried mushrooms in a bowl and add boiling water to cover. Soak for at least half an hour, then drain. Remove any woody stalks.
- Heat the wok on high and add a large glug of olive oil. Brown the pork pieces in batches, adding more oil if necessary. Place to one side.
- Add more oil then cook the spring onion, mushrooms, pepper and beans for 10 – 15 minutes, stirring occasionally, until the mushrooms are cooked.
- Boil the noodles for 5 minutes then drain and add to the pan, together with a decent glug of soy sauce and return the pork to the pan.
- Give it all a good stir and cook for a further 3-4 minutes.
- Serve immediately.
